Saint Patrick’s Day was this past weekend so of course I made something tasty! There were so many different desserts for me to choose from but I decided on something that pretty much everyone likes, cupcakes! But not just regular cupcakes, these were lucky charms cupcakes!

I began by making a simple vanilla cupcake recipe and preheating my oven to 350°. To make the cupcakes, I mixed the dry ingredients together first (flour, sugar, baking powder, and salt). I set aside the dry ingredients and then mixed together the milk, vegetable oil, vanilla extract and eggs together in my kitchen aid mixer. Then I slowly added the dry ingredients to the wet until fully combined. Lastly, I mixed in a cup of water in increments.

I baked the cupcakes in a mini cupcake pan for about 17 minutes, but you can use a regular sized pan for the same amount of time!

While the cupcakes baked, I made the frosting. To make the vanilla buttercream frosting, mix together the unsalted butter, vanilla, milk and powdered sugar. You can add food coloring like I did if you’d like to!

Once the cupcakes were finished baking, I put them in the freezer for about 20 minutes to cool. After they were cool I frosted them and put five or six lucky charms on each cupcakes.

CUPCAKE RECIPE:

2 ½ cups flour

2 cups sugar

3 teaspoon baking powder

1 tsp salt

1 cup milk

½ vegetable oil

2 eggs

1 cup of water

 

FROSTING RECIPE:

3 cups powdered sugar

⅓ cup softened unsalted butter

1 ½ teaspoon vanilla extract

2 tablespoons of milk
