Tasty Tuesdays with Gab: Strawberry Brownies

This weekend I really wanted to eat something chocolatey, but not just boring old chocolate cupcakes or something. I browsed Pinterest and found a recipe for raspberry brownies and those sounded great but I didn’t have raspberries! Instead I decided to use strawberries, the next best thing! This recipe was pretty simple because I only needed one bowl.

I started by preheating my oven to 350° and then I began blending together the sugar and oil in my kitchen aid mixer. I then added the vanilla and then the eggs one at a time. I then sifted in the flour, cocoa powder and salt into the bowl. Lastly, I chopped up about five large strawberries very small and folded them in with a rubber spatula.

I lined an 8×8 pan with aluminum foil, poured in the brownie batter and spread it evenly. I baked for 30 minutes and they were perfect! Depending on your oven you may need about 40 minutes though. Another thing you may want to do is add about half a cup of chocolate chips!

RECIPE:

½ cup canola oil

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup and 2 tablespoons flour

½ cup cocoa powder

¼ teaspoon salt

About 1 cup diced fresh strawberries
